To begin first you will need to preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius. Next take out a baking dish and lightly grease it with extra virgin olive oil. Moving along, next take out a mixing bowl, and then add in the extra virgin olive oil and minced garlic cloves. Stir these ingredients up until you have an even distribution throughout. Next take out another mixing bowl, and add in the Italian bread crumbs, grated parmesan cheese, dried basil leaves, and coarse ground black pepper. Mix this second batch of ingredients together until you have an even mixture. You are now ready to dip your chicken breasts into the extra virgin olive oil mixture, then the bread crumb and minced garlic mixture. Once each chicken breast has an even coating of breading, place them into your greased baking dish, and then pour the rest of the olive oil and breads crumbs over the top of the chicken. You will want to bake your chicken for roughly half an hour, or until the chicken isn't pink on the inside. Serve this dish hot with mashed potatoes.
